How to Host the Perfect Fondue Party

What I love about Chinese fondue is that it forces us to do something we don’t do nearly often enough now a days: taking the time to really enjoy our meal without rushing. It’s also a great way to host numerous people without having to stress on what to make and without having to spend hours in the kitchen.

Chinese fondue has become a tradition in my family. Christmas Eve, we don’t eat Turkey, instead we have a fondue party!! There truly is nothing better than taking your time and enjoying the food with the people you love. Below, I’ve created a list of everything you need to know in order to host a fondue party; after 29 years of this, I’d consider myself a pro!

Proteins

Quantity: You will need to calculate 250g of protein per person.

–          Fondue meat of your choosing (beef, pork, bison, duck, chicken, boar, elk, etc.)

–          Cubes of salmon or other fish of your choosing

–          Sausage of your choosing

–          Raw shrimp

–          Raw scallops, medium sized

–          Cubes of tofu

Veggies

Quantity: You will need to calculate 1 ½ cups of veggies per person

–          Broccoli

–          Cauliflower

–          Green or yellow zucchini sections

–          Small, potatoes

–          Mushrooms

–          Peppers

Broth

Quantity: You will need to calculate approx. 6 cups of broth per 4 people

You can purchase premade fondue broths at pretty much any grocery stores, the only down side is that they are typically, very salty and concentrated but, always a great solution for those of your who don’t want to bother making one. Homemade broths, for their part, will forever remain the best way to personalize your Chinese fondue and make it extraordinary.

Classic beef broth

For 4 portions

Ingredients:

1 tbsp. vegetable oil

2 yellow onions, chopped

2 gloves of garlic, chopped

2 tsp. tomato paste

1 cup of red wine

1 cup of water

1 can low-fat beef broth

¼ cup of soy sauce

1 tsp. horseradish puree

Salt and pepper to taste

1.       In a saucepan, heat the vegetable oil, sauté the onions for 10 minutes.

2.       Add in the garlic and tomato paste, continue cooking for 2 minutes. Add remaining ingredients.

3.       Simmer on low heat for 10 minutes, adjust the seasoning as needed and transfer to fondue dish

Vegetarian Broth

For 4 portions

Ingredients:

2 cups of hot water

1 bag dehydrated mushrooms

A drizzle of vegetable oil

2 yellow onions, chopped

2 garlic gloves, finely chopped

1 tbsp. fresh ginger, grated

1 can low sodium vegetable broth

¼ cup of soy sauce

Salt and pepper, to taste

1.       In a bowl, pour the water and mushrooms, then let stand for 10 minutes.

2.       In a saucepan, heat a drizzle of vegetable oil, sauté the onions for 10 minutes so that they are lightly coloured.

3.       Add garlic and ginger, then continue cooking for 2 minutes.

4.       Add the mushroom water, then chop the mushrooms before incorporating them. Add remaining ingredients. Simmer on low heat for 10 minutes, adjust the seasoning as needed and transfer to a fondue dish.

Sauces

Quantity: You will need to calculate approx. ½ cup of sauce per person

Sauces are often the stars of the table when having a fondue. That’s why I recommend making your own! It’s far from being an exact science, so let your imagination take over. I’ve listed a couple of my favourites below;

 

The classic Bourguignonne

¼ cup of mayonnaise

¼ cup of ketchup

2 tbsp. Chives, chopped

In a bowl, mix all the ingredients!

Garlic & Pepper

2 gloves of garlic, chopped

1 tbsp. of olive oil

½ cup of mayonnaise

1 tsp. ground black pepper

In a saucepan, sauté the garlic in the oil. Let cool, then pour into a bowl. Add remaining ingredients.

Eastern

¼ cup of ketchup

1 tsp. sesame oil

1 tbsp. soy sauce

1 tbsp. honey

1 tbsp. fresh ginger, grated

In a bowl, mix all the ingredients!

Mayo & Basil

½ cup of mayonnaise

10 fresh basil leaves

2 tbsp. fresh parmesan, grated

1 tsp. honey

1 tsp. sherry vinegar

Salt and pepper, to taste

In the blender, grind all ingredients

Extras

–          Cheese curds, Trust me when I say this is life changing! Wrap your meat around the cheese curd and let it cook and melt in the fondue broth…… Heaven

–          Caesar Salad, This is a great side dish to accompany the fondue

–          Pilaf rice, Another great side dish to accompany the fondue
