Taco Potato Crisp

For all the taco lovers, who, like me, are also trying to be healthier… This recipe is amazing! It’s a great appetizer idea for parties or even a quick dinner. This literally takes no time at all and is super easy to make.

For the Potato Crisp

2 Sweet potatoes

1 tablespoons olive oil

fine-grain sea salt and  freshly ground pepper

For the taco meat

1 cup  of lean ground beef

1 tablespoon of olive oil

1 1/2 teaspoons of chilli powder

1/2 teaspoon of cumin

1/4 teaspoon of fine-grain sea salt

1/3 teaspoon of cayenne pepper


1/2 or 3/4 cup of natural sour cream

1/2 or 3/4 cup of salsa

2 to 3 green onion, chopped

-Preheat the oven to 425F.  Place the potato slices in a single layer on a baking sheet and drizzled them with olive oil. Sprinkle the potatoes with salt and pepper.

-Roast the potatoes for 15 to 20 min or until tender.

-Allow the potatoes to cool off for 5 minutes before assembling

-In a medium pan cook meat, adding the olive oil, chilli powder, cumin, salt and cayenne pepper. Once the meat is cooked set aside.

-Top each potato slice with 1 teaspoon of natural sour cream, followed by 1 teaspoon of taco meat, salsa, and green onions. Sprinkle with pepper and serve while still warm.

 Voila!!! Enjoy

  1. My mouth is watering! You can also replace the sour cream with plain 0% greek yogurt! Tastes just as good as sour cream but much more healthier!
